- 1lb ground meat (I use chicken or turkey)
- 6 large bell peppers
- 1 pkg sliced mushrooms, diced
- 1 medium, or 2 small onions, minced
- 1/4 cup freshly shredded carrot (give or take)
- 2-3 cloves garlic, crushed
- 1 tbsp cumin (you can add whatever spices you like… I have made them before with coriander as well.. and red pepper flakes if you want a bit of heat)
- 1 tsp salt
- 1 tsp pepper
- shredded cheddar cheese (or cheese of choice)
- 1 cup tomato sauce
In a frying pan, drizzle olive oil to coat pan and add onion. Cook over medium heat, until lightly golden. Add ground meat, and shredded carrot. While the meat is cooking, fry mushrooms in a separate pan with a bit of butter and garlic. Once cooked, transfer over to meat mixture. Once meat is cooked, add salt and cumin. I really just did this “to taste”. But if I had to quantify… I would say start with 1tbsp of cumin and about 1 tsp of salt, then go from there. Continue to cook mixture for another 5 minutes or so to allow the spices to really blend into the meat. Lastly, add the garlic.
Cut peppers in half (if they are more round then cut horizontally… if more slender shaped, cut vertically, but it really doesn’t matter…) Next, clean the inside and remove seeds. Add peppers to a pot of boiling water. I boil the peppers before cooking in oven to speed up the process at bit. Otherwise it takes a long time for the peppers to cook. Boil until the peppers are slightly tender then remove from water.
In a glass Pyrex dish, take a bit of tomato sauce and over the base of the dish. Next place the peppers face up and stuff with meat mixture. Add a spoonful of tomato sauce to each pepper, then top with grated cheese. In oven, bake at 350 until cheese has melted.
